No- Fuss Fruit Tart

Its still strawberry season here in Texas. Nothing celebrates the time better than an easy fruit tart! Perfect for Memorial Day and preparation takes no time at all. Delicious lemon curd and cream cheese balance out the slightly tart berries. A winner that your family will love. Recipe from the amazing, Nigella Lawson.

Ingredients

  • 3¾ cups crumbled graham crackers

  • 6 tablespoons soft unsalted butter

  • 16 ounces cream cheese (at room temperature)

  • 1 cup lemon curd (at room temperature)

  • 1 teaspoon granulated sugar

  • 8 ounces blackberries

  • 16 ounces strawberries sliced

Preparation

  • Process the graham crackers and the butter to until it resembles wet sand and press into the sides and bottom of a deep-sided tart tin. I used an 11in tart tin with a removable base. Feel free to use a 9 inch tin. After processing, place in the freezer (or fridge if that is not possible) for about 20 minutes.

  • In a clean processor bowl, process the cream cheese and lemon curd (or mix with a hand mixer) and spread into the bottom of the chilled tart tin, covering the base evenly.

  • Arrange the fruit gently (so it doesn’t sink in too much) on top of the lemon cream cheese mixture in a decorative manner. Have fun!

  • Sprinkle the sugar on top of the tart. Place the tart in the fridge, preferably overnight, though for at least 4 hours. It does need to get properly cold in order to set enough for the tart to be unsprung and sliced easily.
