Watermelon Mint Feta Salad

Summer is almost here, and one of my favorite times of the year! This means blazing hot sun, kids playing, old school R and B on the radio, and cookouts galore.  Every great cookout must have an amazing salad (and playlist!) to compliment tender BBQ ribs, juicy corn on the cob and smoky baked beans. This Watermelon Mint Feta Salad is perfect for times like these. Easy to pull together and refreshing! Recipe adapted from Tori Avey.

INGREDIENTS

  • 1-2 LB seedless watermelon chilled
  • 2 TBS extra virgin olive oil
  • 2 TBS balsamic vinegar
  • 1/2 lime juiced
  • 1 TSP honey
  • Fresh ground  black pepper to taste
  • 1/4 cup of feta cheese
  • 1/4 cup fresh mint 

PREPARATION

  • Cut  chilled watermelon into 1 inch chunks. Set aside in salad bowl. 
  • In a small bowl whisk together olive oil, balsamic vinegar, lime juice, honey, and black pepper to taste to create dressing. 
  • Pour dressing and sprinkle chopped mint over watermelon. Stir gently with a large spoon to coat.
  • Sprinkle crumbled feta over watermelon to coat. Serve chilled immediately.
