Citrus and Herb Salmon

Every now and then I eat something that makes me want to shout "Hallelujah" and break out into a Baptist fit! This Citrus and Herb Salmon is one of those dishes! All of the flavors play so well together. It is as easy to make, as it is impressive to look at. Make this one for your Bae (or someone you want to be Bae!), and they will be putty in your hands! Just as a note, do not be intimidated by the amount of olive oil in this recipe, it's worth it! It helps keep the salmon moist and impossible to overcook. Recipe adapted from the Dining In Cookbook.

INGREDIENTS

  • 1 to 1 and 1/2 LBS of salmon skinless

  • Kosher salt to taste

  • Fresh ground black pepper to taste

  • 2 lemons, thinly sliced

  • 1 large blood orange

  • 6 sprigs of fresh thyme and rosemary

  • 1 cup of extra virgin olive oil

  • Juice of 1/2 a lemon

PREPARATION

  • Preheat the oven to 325 degrees

  • Season the salmon with kosher salt and pepper on both sides and place in a baking dish with the sliced lemons, oranges, lemon and herbs sprigs.

  • Drizzle the olive oil and lemon juice over everything and place the baking dish in the oven. Cook the salmon until just about cooked through, 25-30 mins.
